Stir-fry di tagliata e verdure

Se avete fretta, ma l'uomo vuole mangiare, uno stir-fry lo accontenterà e non vi prenderà troppo tempo. Potete modificarlo con le verdure che volete, e farlo ogni volta un po' diverso.
Questa è diventata la mia ricetta base, è veloce e gustosissima e ne avanza anche per il pranzo del giorno dopo.

Ingredienti (per 4 persone):

per la marinata:

¼ cup di salsa di soia
4 cucchiaini di vino di riso (io aceto di riso)
semi di sesamo
1 ½ cucchiaini di olio di semi (io Canola)
1 cucchiaino di zucchero
½ cucchiaino di pepe

450 g di tagliata di manzo/vitello, affettata sottile
1 cup di cime di broccoli
fagiolini (facoltativo)
3 spicchi d'aglio, schiacciati
1 cucchiaio di zenzero fresco o in polvere, grattugiato
1 cipolla media, affettata sottile sottile
1 peperone giallo, affettato sottile
1 peperone rosso, affettato sottile
2 cucchiaini di amido di mais

In una ciotola, mettete tutti gli ingredienti per la marinata, e aggiungeteci 2 cucchiai d'acqua. Metteteci la carne a fettine e giratela bene per bagnarla. Coprite con pellicola e mettete in frigo per 15 minuti.

In un'altra ciotola, mettete i broccoli e i fagiolini, aggiungete 2 cucchiai d'acqua e cuocete al microonde per 2 minuti a potenza massima. Scolate e mettete da parte.

Ungete un vok o una padella grande con olio spray, e mettete su fuoco medio-alto. Aggiungete l'aglio e lo zenzero, fate andare per qualche secondo, poi aggiungete la carne, tenendo da parte la marinata rimasta. Cuocete la carne per 2-3 minuti, girandola spesso, poi rovesciate carne e tutto il sugo che si è formato su un piatto.
Rimettete la padella su fuoco medio-alto e ungete di nuovo. Unite la cipolla e i peperoni, saltate in padella per pochi minuti. Aggiungete i broccoli e i fagiolini, fate andare per un paio di minuti.


Aggiungete l'amido di mais alla marinata rimasta e mescolate bene.
Con un cucchiaio, spingete le verdure verso i bordi della padella, lasciando un buco al centro. Rovesciateci la marinata, e appena inizia a bollire mescolate il tutto. Aggiungete la carne con il suo sugo, rimescolate il tutto, e servite caldo.

Un piatto leggero e gustosissimo, che potete modificare come volete!

A stir-fry usually save me a lot of time when I need to feed the hungry man but don't have much in the fridge... I usually put in some leftover vegetable that need to be used, and I get something a little different every time, but always quick and very tasty! Leftovers are perfect to be brought to work the next day, with some rice. It won't be as juicy as just made, but it's be very alright!

BEEF AND BELL PEPPERS STIR-FRY

Ingredients (for 4 people)

for the marinade:

¼ low-sodium soy sauce
4 tsp Chinese rice wine (I used rice vinegar)
1 ½ tsp asian sesame oil (I didn't have it and i used sesame seeds instead; it worked perfectly)
1 ½ tsp canola oil
1 tsp granulated sugar
½ tsp black pepper

for the stir-fry:
1 lb flank steak, cut into ¼ inch-thick slices against the grain
2 cups broccoli florets
2 cups green beans, cut into 1 inch pieces (or other vegetable)
3 cloves garlic, minced
1 Tbsp grated fresh ginger or ginger powder
1 medium onion, thinly sliced
1 yellow bell pepper, thinly sliced
1 red bell pepper, thinly sliced
2 tsp cornstarch


Combine all the marinade ingredients in a large bowl and add 2 Tbsp water. Add the sliced steak and stir to coat. Cover with plastic wrap and put in the refrigerator for 15 minutes.

Place the broccoli florets and the green beans in a microwave-safe bowl, add 2 Tbsp water and cook on high power for 2 minutes. Drain, and set aside.

Coat a wok or a large skillet with oil spray and preheat it over medium-high heat.
Add the garlic and the ginger and cook for 30 seconds. Add the steak, reserving the marinade in the bowl. Stir continuously until it's cooked through, about 3 minutes. Transfer the steak and any juices into a plate, set aside.


Return the skillet over medium-high heat and re-coat with oil spray.
Add the onions and bell peppers, sauté per 2-4 minutes. Add the broccoli and the green beans and stir fry for another couple of minutes.
Stir the cornstarch into the reserved marinade.
Push the vegetables to the edges of the pan, leaving a hole in the center. Pout the marinade into the hole, and when it starts bubbling, toss it with the vegetables to coat them evenly.
Add the steak and the juices to the skillet and stir to combine.
Serve hot.
